Ingredients
- 1 1/2 cups fresh pumpkin or 1 (15
- ounce) cans pumpkin puree
- 3 eggs
- 3/4 cup Splenda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. vanilla extract
- 1 3/4 tsp. pumpkin pie spice
- 3 oz. Neufchdtel (or reduced-fat) cream cheese 1/4 cup regular half & half
Directions
Mix or blend all ingredients together.
Pour into a well-sprayed pie pan.
Bake at 350' for 30 to 40 minutes.
Cool and enjoy!
