Heat olive oil in large skillet.
Add onions and mushrooms over medium high heat.
Saute until onions are translucent and mushrooms are bronzed.
Add vermouth and cook approximately 1 to 2 minutes until bubbly.
Add the garlic now if you are using it.
Place Tilapia steak on top of onion and mushroom mixture.
Cover and reduce heat.
Cook approximately 7-10 minutes or until fish is done.
Serve with onion and mushroom mixture surrounding the fish.

Variation: Add 1 can diced tomatoes and black olives to onion and mushroom mixture before adding fish.
