Directions

1. With rotary beater mixer, beat eggs, oil, sugar and vanilla.

2. Continue to beat until think and foamy.

3. Using a spoon stir gently in zucchini.

4. Combine flour, wheat germ, soda, salt, baking powder. Then gradually add to zucchini mixture.

5. Add nuts (optional). Mix until it just blended.

6. Divide batter into 2 floured and greased loaf tins (9x5).

7. Sprinkle sesame seeds on top.

8. Bake at 350° for about 1 hour or until pick comes out clean.

9. Cool for 10 minutes and turn on rack.

Notes

1 Medium Zucchini = 1 Cup
