1. Bring water and salt to a boil. Stir in rice and cover.
2. Remove from heat and let stand 5 minutes.
3. Blend milk and egg yoke together, and stir into rice
4. Add sugar, raisins, cinnamon, nutmeg and butter.
5. Mix well and bring to a boil, stirring constantly.
6. Cover and remove from heat. Let stand one hour.
