Directions

1. Wash and cut mint. Place in medium sauce pan with water.

2. Cover and bring to a boil.

3. Reduce heat and boil gently for 5 minutes. Remove from heat

4. Let steep for 20 minutes.

5. Sterilize jars.

6. Strain or press through cloth.

7. Pour 1 3/4 cups of this clear liquid into large saucepan.

8. Add lemon juice, food colouring, and sugar.

9. Bring to a boil. Stirring until sugar is dissolved and stir in liquid pectin.

10. Bring to boil (full). Boil for 1 minute stirring constantly.

11. Pour into sterilized jars.
