Protein Packed Faux Pancakes

Makes 3 1/2 = 1 serving lean

Directions

1. Combine all ingredients using blender (I used my Magic Bullet) until smooth (like real pancake batter)

2. Spray small pan with Pam and cook batter just as you would a pancake. Don’t worry if they don’t flip as nicely as a real pancake…they taste great even if they aren’t pretty.

Syrup: You may use a zero carb/sugar free syrup such as Walden Farms brand OR blend 4-5 fresh strawberries (add spelenda to taste if you like) and drizzle over your “pancakes”

Batter totals 7 servings of protein (3 L, 4 SL). This heats well for leftovers so make 2 meals out of it!
