Cut tops off onions leaving the bottom root on. Slice onion in diagonal slices but do not cut into the root. Mix eggs and ricotta, dip onion into mixture. Place onions onto a lined baking dish or pan. Coat onions with Parmesan cheese, sprinkle with pepper or other seasonings. Bake at 350 until crispy.
